Sebasco Harbor Resort Hires Sebastian Carosi as New Executive Chef
Sebasco Estates, ME (PRWEB) April 7, 2008 -- Sebasco Harbor Resort, a vacation destination of over 550 acres on the rocky mid-coast of Maine, today announced the appointment of nationally recognized chef and Slow Food practitioner, Sebastian Carosi, as Executive Chef.

Chef Sebastian's menu highlights at Sebasco Harbor Resort include: Glidden Point Oysters on the half shell with Cold River Vodka and sweet chili tomato water ice; Roasted Gulf of Maine Monkfish with fire blistered peppers, Aroostook County fingerling potatoes and a smoked ham hock broth; Wolfe's Neck Beef Tenderloin with pimento cheeses mashed potatoes, seared spinach, smoky homemade catsup and buttermilk fried onions; and Hazelnut Dusted Local Barnyard Chicken Breast with spring pea mashers and country mustard cream.
Other local purveyors featured on Chef Sebastian's menu include: Silvery Moon Creamery at Smiling Hill Farm, Ducktrap River of Maine, Green Thumb Farms, Seal Cove Farm, Oakhurst Dairy, Maine Sea Salt Company, Maine Street Flour Company, Freedom Bean Company, White Oak Apiaries, and York Hill Farm, among many others.
Originally from Providence, Rhode Island, Chef Sebastian Carosi earned a degree in Culinary Art from Western Culinary Institute in Portland, Oregon-- the first Le Cordon Bleu accredited culinary program in the United States. He also apprenticed in Sardinia, Italy and brings with him over 15 years experience in the culinary industry operating some of America's finest small luxury hotels, restaurants, ski resorts and historic working museums.
Mostly recently, Chef Sebastian served as Executive Chef at Sugarbush Resort in Warren, Vermont; Executive Chef at The Shaker Table in Canterbury, New Hampshire; and Executive Chef at the Inn of Church Street in Hendersonville, North Carolina. Carosi learned the art of artisan and farmstead cheesemaking from legendary cheesemaker Peter Dixon, at The Training Center for Farmstead Milk Processing in Weston, VT. Chef Sebastian is a member of Slowfood USA, the Vermont Fresh Network, and a founding board member of NH Farm 2 Restaurant Connection.
While Chef Sebastian creates his signature cuisine, his wife, Melissa Carosi, will serve as Manager of Restaurants at Sebasco Harbor Resort. The Carosis recently moved to Maine with their two daughters who also enjoy the local tastes and flavors. Melissa will oversee a culinary staff of over 50 individuals and direct the service and training of all the waitstaff throughout the resort.
Sebasco Harbor Resort features two waterfront restaurants under Chef Sebastian's direction: The Pilot House for elegant dining and The Ledges for a more casual experience. In addition, Chef Sebastian will oversee all cuisine for weddings, family reunions, corporate meetings, and other banquets.
